This photo was taken last Friday during my afternoon-tea break at the swimming pool. Luke biked over and we sat under this magnificent tree eating Thai curry, soaking up the sun and drinking some delicious New Stead apple juice. We also went to the dairy and brought some lollies with the coins in our pockets and a chocolate chip colored bouncy ball.

Lime, Blueberry and Raspberry Buckwheat Muffins.
It is rainy and windy today and i'm quite liking that I get to be inside for once this morning. In between cups of tea I decided to make some muffins. Vegan and gluten free. This is how it went down.
INGREDIENTS:
-2 cups buckwheat flour
-2/3 cups of sugar
-2 Tablespoons baking powder
-Pinch of salt
-2 Tablespoons of No Egg
-3/4 cup soy/rice milk
-1/4 cup freshly squeezed lime juice
-1/2 cup non-dairy spread, melted
-2 Tablespoons lime zest
-2 Teaspoons vanilla extract
-1/2 cup blueberries
-1/2 cup raspberries
METHOD:
-Turn oven to 200 degrees Celsius
-In a large bowl mix dry ingredients together.
-Make a well in the center and add wet ingredients.
-Mix just until all wet ingredients are moistened (do not over mix)
-Fill muffin tins with mixture and bake for 20 minutes or until muffin tops are slightly browned.
-Eat...yum yum yum

Bagels for breakfast.
Today for breakfast...
Marx gluten and wheat free bagel, covered in dairy free margarine and raspberry jam.
Mocha breakfast smoothie.
-One banana
-One cup of soy milk
-Two teaspoons cocoa
-One shot of coffee from my stove top expresso
-Five drops of vanilla.
